COHASSET — Andris Lagsdin breaks into a smile when a beautifully charred, thin, crispy Neapolitan-style pizza emerges from the stove in 6 minutes. The pie is scattered with caramelized onions and shreds of fontina cheese and looks as if it came from a wood-fired oven.
